Cornish Wrasse
A colourful fish popular with divers and snorkellers. This is not traditionally caught by Cornish fishermen but in recent years its commercial value is increasing, and this species is now being sold to Japanese restaurants where it is prized as sashimi.
A distant relative of the perch. A fish from the wrasse family can be recognized by its fat, protruding lips. The body is high and compact. The scales are large and marbled in red, green and brown depending on the living environment and life cycle.
The fish can weigh more than 3 kg but half a kilo is a common size.

Wrasse Information
A superb whitefish to which chefs are returning with renewed enthusiasm now that sustainable stocks are becoming available. The Wrasse has a long tapered body with a mixture of sandy browns, greyish-green and dark speckles. While Wrasse range from 500g to over 6 kg, sometimes we see even larger Wrasse come to Wild Harbour up to a massive 10 kg. While fillets from smaller fish and most commonly used, it is at its best when loins or supreme are cut from larger 4 to 6 kg fish, giving a meatier portion with large, succulent flakes of pure white. As for cooking, Wrasse is very versatile and takes most flavours, but requires care as it is easy to overcook.
Catch Method
Gill netting a lightweight nets made of nylon (monofilament) fishing line that are anchored to the seabed and are used to catch fish by entangling the gills. We have an excellent knowledge of what makes a good hand line fisherman, and many of our fisherman have been practising this method for over 30 years.
Seasonality: May to August
Cooks the same as snapper and sea bream.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
