Ingredients

  • 2 fresh mud crabs (approx. 600 g), cleaned
  • 2 tbsp Chinese rice wine (Shaoxing Hua Tiao)
  • 2 cm fresh ginger, cut in 8 slices
  • 1 spring onion, cut in 4 cm length
  • 50 g shallots
  • 30 g cooking oil
  • 15 g dried shrimp, rinsed
  • 1 banana leaf, cut to round piece (Ø 18 cm)
  • 4 dried shiitake mushrooms, soaked to soften, stems removed, squeezed, cut in cubes
  • 100 g Chinese sausages (lap cheong), casings removed, cut in cubes
  • 450 g glutinous rice, rinsed
  • 1 ½ tsp light soy sauce
  • ¼ tsp dark soy sauce
  • 1 tsp sugar
  • ¾ tsp salt
  • 1000 g water
