The very mention of halibut is bound to make Monty Python fans chuckle since it features in one of their most famous lines from The Life of Brian.
But that’s not all it’s famous for.
In fact, the world’s largest flatfish has long been sought after for its firm, white flesh, and mild flavour.
That said, there’s nothing mild about its temperament. Halibut are powerful and ferocious predators with only sea lions, some species of shark, and humans above them in the food chain.
How to Cook
Halibut’s meaty texture holds well when cooked in a variety of ways from baking, sautéing, and grilling.
However, you choose to cook it, just be sure you don’t take your eye off the ball as this expensive fish dries out when overcooked.
A simple way to treat halibut is by baking it encased in baking parchment with lemon, capers, and parsley. This is a great technique for anyone cooking halibut for the first time as baking in paper helps the fish to retain moisture.

Look for rich, full-bodied white wines aged in oak such as Chardonnay, New World Sauvignon Blanc, and White Rioja.
